Watermelon salad

Serves: 4 sides
Preparation time: 10 minutes

Ingredients
1/8th of a large watermelon, cut into bite-size chunks
120g mixed salad leaves, washed
150g fetta cheese, cut into bite-size chunks
1/2 a Spanish onion, cut into fine rings
Generous handful of kalamata olives (optional)

Method
Combine all ingredients in a large bowl and serve.

Notes
This delicious salad goes beautifully with a summer-night barbeque.
